They measure completely different things. Similarity compares your text against existing sources — papers, websites, previously submitted work — to find overlapping text. AI detection analyses your writing patterns to estimate whether the text itself was generated by an AI tool, regardless of whether it matches any existing source. A paper can have a low similarity score and a high AI score, or the reverse.
